    February 1, 2024 - Once again, use a good large glass. And not too, too cold, please. This limpid, green-gold Chardonnay from the fossil-rich Kimmeridgian limestone of the hills above Chablis is Burgundy, after all, and another textbook example of how a fine wine’s engaging vitality becomes more and more compelling over time, after it’s poured. Here, delicate aromas of elderflower, green apples, and ripe pears gradually give way to more terroir specific suggestions of sun-bleached oyster shells, salt marsh hay, and chamomile, as the nose evolves in the glass. On entry, the wine is lean and vibrant, with white orchard fruit flavors seasoned with fresh tarragon and chervil. Then the oyster shell brininess and limestone minerality become more explicit and tailored, and the wine narrows its focus over time, with a rare combination of high energy, vibrancy, and persistence. Drink now–2033.

    Soft-ripened cow’s milk cheeses, mustard roasted white fish, chicken with tarragon, egg-based dishes, butter-based sauces, roasted root vegetables with fresh herbs.Traditional dishes of the Region:Gougeres, Escargot, roasted Bresse chicken, parsleyed ham.

    November 7, 2022 - NW 2022 Xmas Roadshow (UK): The nose is filled with buttered toast, nuts, ripe apples and damp oyster shells/wet chalk.
    The wine is medium-bodied with more flesh and concentration than the regular Chablis and that underlying richness of Chablis. Flavours of melba toast, apple puree, dried apple and nut add richness and breadth, making this Chablis bigger than I would expect and less obvious should I have it served blind!
