  January 10, 2023 - Blend: Macabeo, Chardonnay
  from separate early morning harvest of certified organic vineyards
  (since 2008) in the second half of August.
  Oxygen-free cold maceration; use of free running must.
  Partial aging of the wine in two-year-old French oak barrels.
  Blended wines in second traditional bottle fermentation for
  at least 15 months.
  12.5% Abv.
  
  Background: Established by María José Peidro and Julián López in 1990,
  with the winery bearing the nickname of the area, ‘Chozas’.
  Winemaker: Son Julián López-Peidro (since 2016)
  Managing Director: Daughter María José López-Peidro
  
  A(ccuray)=2: Pale straw/yellow. Fine mousse and perlage.
  B(alance)=2: Ripe fruit with vibrant structure.
  C(omplexity)=2: Stone and tropical fruits, floral hints.
  D(epth)=1: Tangy mouthfeel. Even palette and finish.
