    February 11, 2012 - Poured with vigorous and persistent bubbles. No signs of loss of carbonation. Aromas of roasted nuts, sticky toffee pudding, brioche, raisins and honey. Intense and deep nose. Evolved profile, very much like a fine Oloroso sherry. Mostly flavours of glazed roasted nuts and raisin tart. Slightly off dry with a decadent level of RS but acidity to balance it out and lots of minerality. Vintage Krug like finish (complex; 2-3+ minutes). So richly bodied it could dominate a sea bass or black cod main course. Have enjoyed this champers several times over 5 years, and it just continues to build in complexity and intensity. Still has another 5+ years left in it.
