  March 13, 2024 - Served by the glass. Light metallic golden color. Pineapple and Sprite soda dominate, but in a good way. Dry, slightly glossy palate. Good, tongue coating acidity.
  
  Enjoyed this at Duddell’s on my last night in Hong Kong. I’m becoming a big fan of Chablis as the starter wine for dinner. I’ve had better, but this was solid and engaging.

  February 25, 2024 - First day this was fine. Clean nose and palate, but felt a little flabby for my tastes.
  
  Recorked and tried again the next day. The acidity really came to forefront and more classic profile overall. Citrus, oyster shell, crisp, and chiseled. Maybe it was just something going on with me, but much more in line with other notes on day 2.
