August 30, 2023 - Give it time to open up, at least an hour, then sip through as flavors develop. Starts with a strong smoky flavor, almost like jamon serrano, but as it aerates it breaks down into softer, slightly more bitter notes of raspberry, vanilla bean, and light chocolate bitterness. Very astringent, aftertaste lingers for a while and ends on a herbal note, of very light mint and basil. Lots of sediment, so decanting is a must. Delicious
