  July 4, 2008 - Quite fine bubbles - not too persistent.Nose shows clay, yeast, and a nutty aroma not unlike caramel pecans. Medium acidity and off-dry with slightly more citrus then was showing on the nose. Fairly full bodied with a slight waxiness and minerality to the palate. Pleasant lenght.
