    July 28, 2021 - Leaf Day - Garnet core extending to the slightly browning edge. Nose of mint, cedar, leather, wet clay and dried red flowers. On the palate it’s very smooth and velvety with the tannins fully resolved but still there. Flavours of dried red fruit, leather, dried cooking herbs, cedar, and faded vanilla bean. A bit spicy on the long finish with the flavours on the palate continuing. Excellent balancing acidity. At it’s peak with secondary and tertiary flavours happening. Still lively and there’s plenty of fruit left so could go another 3 or more years in the cellar if one wished.

    October 21, 2020 - Fruit Day - cork came out clean (although it did crack a bit 1/2 way up (used a Screwpull)) and there’s only a millimeter or so of penetration. Decanted off about a tablespoon of fine sediment with some additional clinging to the bottle. Dark garnet core out to a medium garnet rim - showing very youthful today. Still cool from the cellar - Nose of dark fruit, dark chocolate, mint and some sous bois and the barest mention of vanilla. On the palate, it’s very dark fruit, dark chocolate, new leather, and savoury cooking herbs (oregano, bay leaf). The finish carries the dark chocolate and some fruit along with the leather to a medium to long length. I’ll update after it has come to cool room temperature and had some time in the decanter.
    After 1 hour - Spice, plum, new leather, basil show on the nose and palate. This has developed beautifully in the glass. Smooth, clean and delicious. Tonight, it’s a winner!

    September 19, 2020 - My last bottle, and sadly so -- a great pairing with a beef stroganoff, after decanting and getting some air for an hour or two, even at this age. Pepper, balanced tannins, a lovely richness that was even better than the last bottle I opened.
