February 8, 2009 - The Wellington was very dark and had heavy sediment surrounding the aperature upon uncorking, so we decanted for a half hour before drinking with dinner. The wine had a nose of dark fruit and light, toasted oak. The taste had a bright and fruity front, with an impressionable, mouth-watering finish. The wine lingered long enough to be appreciated, but didn't wear out its welcome... rather it left me thirsting for more.
This syrah stood up well with a dinner of bacon-wrapped sirloin, but was soft enough to be comfortable by itself.
