    July 30, 2016 - From the same batch as the last bottle. Definitely past the peak, still some bubbles. Based on my experience, this needs alot of air to freshen up and drink more like a mature white Bordeaux.

The flavor profile is very similar to dry white Bordeaux of the period. Apricot, baked cinnamon apple, honey, smoke and mineral. Medium concentration, bright acidity and good length. A few thought madeirized but I felt just mature. Not showing a great deal of complexity and certainly further advanced than the other 73s I had. It would be interesting to try at home over a couple of days as the mature whites tend to get fresher and gain weight with a few hours of air.

    November 29, 2013 - 40th Birthday Old Vino Dinner (Era Bistro, Brisbane): This wine kicked off the night. At first I found it a little sweet, but by the second mouthful it really came into its own. Almost a golden colour, still with a few bubbles. It was fully mature, a little apricot/butterscotch, but still with acidity that kept it in balance. It worked really well with the canapés - a lovely old champagne that will still drink for a few years yet.
