    February 7, 2016 - If you are trying Vin Jaune for the first time, be warned. It is an acquired taste.
    A milder oxidisation on the nose in this 40-year bottle comparing a younger bottle (vintage 1995 - the first one I've tried previously). I had the bottle open for 2 days. It continuously evolved. The palate started with minimum acidity and very ripped. On the 2nd day, it turned out to be super aromatic (dried grapefruit, honey) and well-balanced. Lovely wine!
