October 5, 2023 - Nose: Dried fig, balsamic, honey,
Notes: to my surprise still quite bubbly, relatively lively given its age and probably would give you most of the things you look for in an old champagne. This clearly is a well conditioned bottle and very joyful to drink now.

November 21, 2015 - Celebrating 30 years of life and wine (Guillaume Restaurant): two very consistent bottles, served with grilled yellowfin on basil, soy mustard seed salad followed by royale of asparagus with truffle and crab.
Similar to DP, the few bubbles quickly dissipated, but left a picture perfect rose hue, a fine balance of acid and plump red fruits, but with a rich creaminess. slightly sweeter than expected
