    (Domaine Tissot (André & Mireille now Stéphane) Arbois Bruyères et Vasée) One of several single-vineyard Chardonnays produced by Stéphane Tissot, grown in a soil of clay over blue marl. The wine is made in what Tissot maintains is the traditional Arbois way—vinified and aged in barrels kept completely topped up. About 15% of the 2006 harvest was botrytised, which may account for the intensity of this wine. The overall effect is a powerful minerality, with earthy notes playing on the nose and oak in the background from more than a year on the lees in barriques (20% new). On the palate, it’s a concentrated wine with dominant stony, earthy mineral notes and an extremely long finish. A wine to keep for as long as 10 years. Wines of the Jura
