March 22, 2010 - Grape varieties: Selected Sangiovese grapes (50%) and Cabernet Sauvignon (50%), harvested bu hand, cultivated on hilly ground composed of clay schist dating back to the Pliocene Era, at an altitude of 280m a.s.l. Thoese elements, together with the clay-base soil and particular climate, are the ingredients which create superior grapes. The Sangiovese, from the Latin "Sangius Jovis", is the predominant grape-variety in this wine and the clam, elegant characteristics of the Cabernet give this wine ample olfactory complexity and greater strength to both body flavour.
Characteristics:
Colour: Deep ruby red tending to garnet with age.
Bouquet: Complete and elegant, with an evidently aristrocratic character; hints of wood can be perceived amidst the typical herbaceous notes.
Flavour: Dry, full and smooth, rich with personality and well structured.
Alcohol content: 12,50% - 13%
Winemaking techniques: The wine obtained ages for 2 years in oak barrels and for 2 years in oak barriques, followed by another 18 months in other types of valuable wood and 6 months in-bottle refinement.
Gastronomy: The prime quality and structure of this wine demand excellent first courses and risottos with sauces made from wild boar and hare, tasty red meat dishes such as roast game, vegetable soufflé and spicy mature cheeses
