September 7, 2010 - Opened four hours before serving. Aromas of bruised bananas and cognac on the nose. In the mouth, there is more bananas but it is dominated by the acidity which is becoming close to vinegar. Finish shows more classic aromas of cassis leaves but also brings some nail polish to the mix.
A glass was left out for 24 hours. It had actually improved. The nail polish aromas were not as prominent, and the bruised banana tones had completely been replaced by really quite substantial typical mature aromas of ceder tree etc. The acidity is still unbalancing though, to the point that finishing a glass is more hard work than I want to exert myself for.
