March 25, 2012 - Got this bottle from the winery's wine club for $21 and drank before dinner with a smoked salmon terrine from Sprouts (which wasn't that great, but we didn't want to travel all the way to Trader Joe's for their fabulous (and extremely affordable) chicken liver pate).
As usual, this is another consistently fantastic bubbly from Chandon. The nose is citrusy, creamy, and slightly earthy, with suggestions of a stony minerality.
Flavor-wise, this is a yeasty, creamy, buttery bubbly (97% Chardonnay and 3% Pinot Noir) that has a VERY Domaine Chandon flavor profile. We've been Chandon wine club members for several years now and can usually spot a Chandon bubbly from a mile away. The funniest thing about this bubbly is that at only 3% Pinot, the flavor profile demonstrates remarkable depth-of-flavor (especially for a $21 bottle of bubbly). That 3% Pinot adds the usual Pinot bubbly traits (tartness, earthiness, etc.) while the 97% Chardonnay adds fantastic creaminess, along with the aforementioned citrus and stone/mineral elements.
The wine went very well with our "so-so" salmon terrine and would pair equally well with the wished-for chicken liver pate, as well as just about any seafood dish (especially baked white fish and especially scallops).
