    September 12, 2013 - Tasting notes for the Jean Sipp 2007 Riesling Kirchberg de Ribeauvillé: (this will also be my first recorded tasting)
    The wine is a pale yellow-gold with hints of green on the edges and appears to be quite viscous. On the nose, I'm getting really sweet citrus with a touch of honey and some non-fruit aromas I really can't place. In the mouth the wine starts out sweet and is bursting with sweet citrus like tangerines. Low acidity, medium to full bodied. Wine dries up a bit on the finish, I would say it's off-dry overall. You should take everything I say with a grain of salt. I just quit smoking and my palate isn't great (yet) at identifying flavors or describing structure.
    Saying that, I absolutely loved this wine. It was complex and refreshing, sweet without being too rich.
    EDIT: Should also not that at 14%, this is a pretty big Riesling. But, because of the slight sweetness I'm guessing, the alcohol barely made an impact on the palate.
    EDIT2: I originally tried this only slightly chilled, but then put it in the fridge and tried it again after it was much cooler. The acidity really picked up and has completely changed the wine. The wine at first tasted sweeter, richer and more decadent than what I think of when I think Alsace Riesling. But chilled, it tastes juicier with a fair amount of acidity (still not a lot, but I wouldn't quite describe it as low acidity like I did initially). Also getting some tropical fruit flavors now. Papaya comes to mind, still citrus dominant.
