    January 1, 2024 - 醒酒一小时,淡金黄色,闻香有一股鲜味,青草,梨子,酒泥和奶油面包的香气,入口酸度高,酒液咸,收口微甜,白花,淡淡青草,成熟的核果,酒泥气息,还有植物的微苦,后段辛辣,酒体不轻,余味茉莉花,奶油吐司和焦糖味,奶香爆棚。结构宏大的一支白葡萄酒,很有深度,口感扎实,浑然一体,酒体比上一支勃艮第霞多丽大了整整一号,年轻而又强健,至少还有二十年时间发展,现在处在步入成熟的过程中,远没进入适饮巅峰期,也没有醒酒达到最绽放的状态,但一流的质量水准已经征服了我,橡木桶影响很明显,从来没有在一支波尔多白上感受到这么精细的橡木桶使用,风格是时尚的,愉悦的,草味很收敛,果子的成熟度也是恰到好处,明明是大开大合的一款酒,细节却照顾得如此妥帖,这精准性令人佩服,一秒圈粉。

    June 17, 2023 - Millésime chaud… ai connu des millésimes plus élégants pour ce Pavillon Blanc, petite déception surtout en vis à vis du Sauvignon des Pinard.
    Match perdant contre Sancerre Petit Chemarin 2015.
    Bel accord sur verrine gambas, pamplemousse roses, concombre et couscous de maïs.

    November 28, 2022 - Please see my note from yesterday (rated 83). I was not able to finish even one small 3 oz glass last night due to the lack of everything but a pleasant weak nose. I vacuum sealed it overnight. The vacuum works better than the Corovan for me and is so much easier and cheaper. Today I aerated and decanted it for one hour and behold the transformation! It developed an unmistakable moderately intense Pav.blanc nose with typical minerality, complexity and oaky white fruit. The taste is superb with a nice mid palate and 20+ second finish. I believe this bottle was stored so well that it is still young and in need of oxygen. Bravo!!! This wine should continue to improve with time and proper storage. I have 5 more bottles in my cellar so I am a happy man. I did have Covid 8 weeks ago and have been drinking very little so perhaps my taste was affected? In any event it went from 83 to 94 points overnight. Please ignore yesterday's 83. It is definitely a 94 point wine.

    November 27, 2022 - A well stored bottle with mid neck fill, perfect capsule and impeccable label. It looks like new! The color is light yellow gold with no sediment. It is very near the same color as the 2013 and 2016 looking at them side by side. At first taste it seems young but there's not much here and I doubt it will improve. I am a long term fan of this wine but this bottle was disappointing. Certainly not worth the price of admission. The modest nose might be the best part. There is little acidity to balance the fruit. Mouth feel and mid palate are clumsy and weak and the finish is short. This is by far the worst Pavillon Blanc I have had. There is just nothing good about it. I'm hoping it's just a bad bottle since this is the first of six. I do not think the bottle was flawed or defective. I'll update when I drink the second bottle if there is any change or improvement. I'm confused about where these higher scores are coming from? Did I lose my taste?

    March 6, 2022 - Vinetasters: Sauvignon Blanc (Skokie, IL): Served double blind. Slightly funky and dirty on the nose, alongside notes of pineapple and apple cider. Oily in texture but not too green. This feels relatively low acid, even though some of it does come through on the finish in a disjointed way. Not much flavour here; this is more of a textural wine with the oily components playing a big role. Slight bitterness on the finish. My 7th, group's 6th.
