    June 4, 2021 - Drunk over 2 days, needed some minutes of air to unfold: pretty straight, lemon, some apples, salty and stony, some honey notes, excellent length. I prefer it vs the larger Vaillons 09, the recently tasted Forest 09 is very good too. No change on day 2. Drink it now or over the next 10-15 years.
    By the way: I was today in Chablis and tasted the 2020 of Dauvissat from the barrel: grande année classique, real beauties - unfortunately huge losses due to frost in 2021.

    February 5, 2021 - Ripe fruit, mainly apple and grapefruit, with aeration salty, iodine notes are getting more present, the wine seems to go out of the honeyed period on a more focused and straight level.

    November 2, 2020 - From 75cl, inferior cork soggy and pasty half-way back, wine unaffected. Such a relief to open a 11-year old Chablis which isn't premoxed or plain corked. This bottle exactly like the one recorded here on 25.04.2018: brilliant scent and finish (tangerine oil aromatics!) let down badly by the relatively soggy, flabby, flat, boring mid-palate. Probably better sooner rather than later, even if your bottle is as intact as this one was. 88-89P

There’s a brisk note of salt/brine on the nose. Focused with good depth and cut. Spices, lemon curd. Dauvissat the way I like it.

    September 26, 2019 - Some Birthday wines (St. Anselm DC): This bottle has aged really nicely. Vibrant, salty, brisk and pretty but plenty of textural depth. Lemon curd, yellow apples, topped in honey, salt brine and chalk.

    April 25, 2018 - From 75vl, perfect cork. Better than my previous bottle (11.01.2018), this was truly excellent at the start (honeysuckle-tangerine aromatics, fine skinny balanced entry), but fell apart on the mid-palate (soft, flabby, insubstantial) only to show a touch of true brilliance on the long, tangerine-oil and iodine-tinged finish. Go figure. If you are lucky enough to have bottles without premox, this should be good for several years, and certainly makes interesting drinking. 89P

    January 11, 2018 - From 75cl, suboptimal cork stained halfway back. Once past the Dauvissat signature tangerine aromatics, this is an undistinguished, soft, low-acid, surprisingly linear and monolithic version of Chablis. Disappointing at first taste, and overwhelmed by a white fish dish with lemon/cream sauce. On this showing only 87-88P(?)
