March 31, 2023 - Opened at the All-Star Dinner by Zachy's in HK. Served from Imperial, probably bottle-breathed in advance.

Still felt very primary - probably due to the format size - but showed some welcome development in the glass with air. Slightly green, crisp, saline, mineral and zesty - yet with a hint of creaminess that I find comes with top Sauvignon Blancs. Everything rounded together to form a beautiful and very well drinking wine.

Would be keen to see how this wine in a standard bottle format performs, and whether the evolution is much greater.

March 31, 2023 - Nose: sponge cake, green grass, bit of plastic, white flower
Notes: Drank from a double magnum. Although this has quite a nice aroma and in fact the characteristics of semillon certainly stands out but unfortunately it smells a lot better than it tastes and the overall palate wouldn't balance so it is a little anticlimax. This is definitely ready now and hasn't showed any indication of tiredness so I think I would be safe to assume another 10-15 years of drinking window to this.

December 17, 2022 - Mature but not over the top. A very good wine if you like mature white Bordeaux - time to drink up it will not get better.

April 28, 2022 - Rich, fat and classic; vintage prohibits the wine from being overly fat but supplements it with ample acidity. Really enjoyable today. 94-95

What a difference a day makes. On initial opening it was quite subdued but 24 hours later it was singing. A beauty
