    (RAMEY Cabernet Napa Valley) UPDATE: The All-Carb Diet Bread is polarizing but in Paris, it is religion. Parisians will travel for the finest baguette, often twice in one day. It is somewhat heretic to consume the morning’s baguette with dinner (how could you?), which is why lines form at 6:30pm before most bakeries close at 7:00pm (Parisian business hours are typically 10-7, with a traditional rest/closure from 2-4, some do not follow this set of rules anymore but many still do – most bakeries open earlier than any other business, between 7-8 am). With so many of you traveling to Europe and Paris in specific, I am asked one question over and over: “Where do I find the best baguette?” (where to find the best natural wine caviste is the second most requested, which shows where our priorities lie!) My vote for the finest bakery in Paris (not to be confused with the finest pastry or cake shop), is Véronique Mauclerc in the 19th - this bakery is in a class by itself and Véronique claims one of the last traditional wood ovens to be found in Paris. No commercial yeast is used and, much like her brethren in the BIO/organic wine trade, the proof of Veronique's unrelenting dedication to quality is in every bite. Make a day of the Parc Butte Chaumont and a visit to Véronique Mauclerc – you will discover the next Paris, one that is humming circa January 2011. With the help of Roger, here is a list of the finest bakery/baguette shops in Paris – this was largely updated in 2009 but it was also updated in 2010 (although the link does not recognize the 2010 updates but they are on here). While not exhaustive by any means, it’s a good road map that should steer you in the right direction (although bakeries, like brasseries, change hands and new owners do not always uphold the standards of the past). According to the 2010 version of the “Grand Prix de la Baguette de Tradition Française de la Ville de Paris” (the annual baguette bake-off) the current title-holder of Paris’ finest baguette is Le Grenier à Pain Abbesses in the 18th (Montmartre). I’ve had this bread many times and it is excellent. If you cannot venture out to Veronique and the 19th, Le Grenier is certainly worth a trip if you are visiting Sacre Couer: http://bit.ly/emw5oV BTW, if you are searching for one reliable natural caviste/wine bar in a heavily visited area, try Le Cremerie in the 6th. They have a well-selected/well-priced list (for the neighborhood) that changes often and they also have terrific small-plates to nibble while you sample the wine – just what many of us are looking for: http://bit.ly/fRiYhC - Jon Rimmerman ******************************************* 2007 Napa Cabernet Dear Friends, I'm not sure how we transition from the baguette to Napa Cabernet but somehow there’s a connection? From top to bottom, for red and white, David Ramey hit the jackpot in 2007 and (if my math is correct) his 2007 portfolio was one of Tanzer’s most praised California stables in the history of the International Wine Cellar (IWC). Think about that for a minute? We’re talking about Tanzer. Enough said. The furry over 2007 in Napa really hits home when Ramey’s Napa bottling is so allocated, it’s hardly in distribution (in the past it was readily available – not so for the 2007, the winery was forced to allocate 100% of it). The key to the success of this wine was David’s decision to produce a single stalwart example that he could use as a reference point for the year (versus dividing the material into 2-3 higher-priced labels). Instead of a Napa Valley, Larkmead or other bottling, he combined them and made one very strong wine that could have been $60+ but we’re not going to complain at its present asking price. The result is a top-tier example of 2007 Napa Cabernet for what has become a moderate tariff in Napa (if $40 can be considered moderate?): ONE SHIPMENT ONLY directly from the source – we cannot obtain a second shipment of the 2007.
