    July 27, 2012 - Up two points from our earlier bottle on 5/4/11. This improved with more time in the bottle. The nose seemed a bit weaker, but the taste had mellowed and the sense of bitterness that I'd found before was less evident at the start. Interestingly with time in the glass (and on the 2nd day) it did get a bit more on the bitter side and the pepper had a stronger bite. To my taste this had an optimal flavor point within about fifteen minutes of bottle opening and less than an hour out of bottle.
