At cellar temp, 60 deg, overwhelmingly bruised red delicious apple. Flabby. An hour or two in the fridge and the wine redeemed itself, and showed very well. The previous bottles didn’t require the lower temp.

We started of the tasting with this, and it was on fire tonight. Frothy, golden, yeasty, showing a touch of malt balls. Just killer on palate - has that C-T intensity and depth but a little bit of maturity - a touch of malt balls or mocha. Firm but smoothing mousse. Some citrus shows here, spicy golden. Lemon peel. Candied ginger. Great grip. Orange and lemon peel and spice on the finish. Superb. Nose - 5.5/6, Palate - 5.5/6, Finish - 5.5/6, Je ne Sais Quoi - 1.5/2 = 18/20.

Indianapolis III; 9/15/2017-9/17/2017 (Indianapolis, IN): Disgorged October 2010. Absolutely brilliant pinot meunier. This is a super dense and powerful bottle of champagne. There's a profound nuttiness and density on the palate here, as well as some bruised fruit. Crisp minerality, with a good chalky finish. Lightly earthy and mushroomy as well, this needed a bit of air to really strut its stuff.

I first had this wine about 5 years ago, and it was amazing then. It was phenomenal this weekend. We opened the bottle to serve with gougeres, and it was a fabulous match. Somehow we managed to save some for night two, and it was even better. It still has lots of ripe red fruit, and now also has deepened to a point where it has become more red wine than Champagne. Amazing stuff.

Rockstar Champagne... like, all of them (E&R Wine Shop, Portland OR): Soft and tart aromas. Quite smooth, but a slightly odd note of cat litter. Some slightly oxidized notes on the creamy, smooth palate. Like the texture, but don't like the oxidation. Puckering minerality on thee finish, which is tart and again showing some oxidized apples.
