Wednesday, December 13, 2017 - Decanted for 90 minutes prior to a delicious steak dinner followed by flourless chocolate cake. It was a powerful wine, no rough edges, rich mouthfeel, cassis, chocolate, espresso and no hint of that caramelly, Caymus flavor that makes a wine lover want to use a spit bucket. The finish is very long and the wine evolves in the glass. Will it age... yes, it's still very powerful and it did take 90 minutes in the decanter and another hour of drinking to open beautifully, but it did keep evolving in the glass until the last sip. But it's drinking beautifully here and highly recommend it accompanied by a porterhouse, or new york strip, no vegetarian or seafood dishes with this one.
