Monday, April 15, 2019 - Great wine. Amazing texture and balance. This wine is so smooth with two hours in the decanter. Delicious too. Buy now as this will go up in price.

On the other hand some experts are into young wine in a way they enjoy the wine beyond the tannin. You just have to drink the young wine at cooler temperatures so it won't bite as much and enjoy the structure and the finish. To enjoy full maturity one has to wait at least 10 years. My friend Eric Jensen who is the founder of Booker wine out of Paso Robles told me that he does not believe in aging wine. If wine is made well it is ready to be drank right away. I think the key is to become familiar with a particular young wine and not to decant it rather drink it slowly out of the glass and see how it develops and base on your finding then you decide whether to decant or not for the next bottles.
