Saturday, July 31, 2021 - Dark and youthful in color. Floral and fruity on the nose, lots of structure, smoother on day two. Predominantly fruit on the palate with some pepper and and cinnamon. I like this A LOT but I think it will be even better with a few more years of cellaring. I need to try more Torrin!

    But seriously, Paso is very polarizing. There are many that I don’t like and my first reaction to an unknown Paso cab is ‘no thanks.’ But I am learning there are some real gems. Can’t wait to make a visit one of these days

    8/1/2021 7:00:00 AM - Yeah, um.....that garage probably would not hold a good wine! We did an abbreviated Paso trip one year and found nothing to our liking, but we certainly did not hit the right places.

    8/1/2021 9:01:00 AM - Hello Southeasterners. Stephan Asseo's L'Aventure, in my opinion, produces Paso's best Cabernet in vintages he decides to bottle it alone. In the 2019 vintage, he joined fruit with Vice Versa to produce Vice Versa's Les Cousin which the popular CSIMM1161 awarded 100 points in a review on 7/27/21. Given its scarcity and probable price tag, I expect to never taste it. Admittedly, most Paso Cabernet cannot compete with Napa, let alone Napa's best, but a couple can. And Jen, everything Torrin produces is wonderfully crafted. By all means, search it out. >John
