Friday, January 20, 2023 - Decanted two hours before service. In the glass, pale rose-colored at the rim, shading gradually to medium ruby red at the core. On the nose, floral notes followed by crushed cherries and a mix of nutmeg and lemon thyme. On the palate, graceful yet structured, with plums, cherries, baking spice, and a tinge of salinity, and a moderately long finish that draws you back to the glass. This may be the longest I've ever let a Paul Lato age, and based on this performance, I'm wondering if I should let them go longer.
