Monday, April 10, 2023 - Burgundy night at IT Paragon: Was kicking myself not guessing this, was between PYCM (for the reductive but ripe fruit) or Ramonet (for the spearmint note on the nose) Chassagne but went for the latter. Clearly a warm vintage but drinking so youthfully that I went for 2015. Very linear and well-balanced, a profile of white Burgundy that was very much up my alley.
