Saturday, April 29, 2023 - Purchased for $23. After a lousy wine night last night, I decided to do some exploring this afternoon and opened my very first Pét Nat.

Pét Nat stands for Pétillant Naturel, which is also known as the Méthode Ancestrale production method for making sparkling wine. This method of sparkling wine production uses icy temperatures (and filteration) to pause the fermentation mid-way for a period of months and then wines are bottled and the fermentation finishes, trapping the CO2 in the bottle. When the desired level of CO2 is reached, wines are chilled again, riddled and disgorged just like the traditional method, but no expedition liqueur (sugar) is added.

This wine is dark golden in color, almost bronze. Cloudy. Reminds me of a hard apple cider. Notes of apple cider, honey, yeast and a slight note of pear. Definitely some residual sugar because there's a sweetness on the palate. Average acidity and shorter finish.
