Tuesday, August 22, 2023 - PNP a portion and it required about 30 min to open, then decanted on day 1 and 2 and each time opened after about 5-10 min. Medium copper, salmon, amber color, much less pink but more neon orange-copper over time. Vegetal cab franc, melon, grapefruit rind on the nose. Grapefruit, strawberry, melon on the palate with a firm acidic core with about 35-40 sec finish. I agree this has improved with time and seems more acidic and focused and less watery. Pairs with nearly anything, including chicken shawarma, steak vermicelli (but not the fish sauce), and even jajangmyeun.
