Saturday, November 25, 2023 - This has really changed or at least this bottle. The acidity has perked up significantly. Very tight on opening, needing about 30-60 minutes of air. Lemon zest, oyster shell and minerals. Beautifully composed, pairing so well with a diverse array of food (tonight was fusilli with clams, Serrano, pecorino, garlic and roasted cherry tomatoes). It’s amazing how this wine went from low acidity and almost flabby to tight with punchy acidity. I have one bottle left that I will likely drink this coming year.

    11/26/2023 2:30:00 PM - Sounds like bottle variation. The bottles I’ve had of this are outstanding. So much so that I’m hanging on to my last bottles and bought some of the 21. I think it’s unlikely Chablis becomes more tart with age. I could be wrong but that doesn’t seem logical to me.

    11/26/2023 4:54:00 PM - I’ve been drinking this wine since the 2010. The ‘18 is different. The vintage is not as balanced as recent releases like ‘19, ‘20. I did not buy much ‘18, but if you love it, then right in!
