Sunday, December 17, 2023 - The second 27-year-old of the 9 champagnes tasted tonight, but this was the wine of the night. The age shows in the amber gold color. No pressure left behind the cork, however, some perlage persists on the initial pour, and also fine bubbles coating the glass. Toasty caramel, spicy oils, and green apple on the nose. The palate is enveloped by a broad, embracing attack of both flavor and energetic acidity. Stunning and beautiful. Long finish.
