Thursday, June 10, 2021 - Pale lemon colour. Small and lively bubbles. Medium and developing nose with brioche, toast, bread, ripe yellow apples, ripe lemon and wet stone. Medium taste of ripe green apples, ripe lemon, chalk, wet stone, bread dough and toast. Long and dry finish. High acidity. Medium body. A very good Vintage BdB with a vibrant acidity that makes it a great companion with food. Needed 15 min in the glass to open. Drink now or over the next couple of years. Goes well with cured meat or shellfish.
