I like the concept of this wine more in theory than execution. The lower pressure does indeed make this a more gentle wine, particularly for delicate foods. I just didn't think it had much flavor. The flavors seem a bit diluted. I laughed a bit at the "pool water" reference below and while that is probably a bit overly harsh, I understand the description. Sometimes when you swirl all the bubbles out of a champagne, you are still left with something pretty delicious and this could be better in that regard.

Love Gimonnet and had purchased this due to it being bottled under lower pressure (as my wife doesn't like bubbles…yah, tell me about it). It was good, but had hoped for more complexity and nuance. Still a good value in the low $50s but definitely not as good as I had expected it would be.

Drank at large dinner; as advertised, this was an excellent food wine. A bit more supple than one might expect from a baby BdB from the Cote, likely due to the generous portion from Cramant (over 40%). Creamy yet saline, not super complex but not a simpleton either. Held up to a veal chop beautifully, and the lower pressure is always appreciated with food. Great showing for a wine disgorged less than 8 months ago, this should add a point, maybe two, with more time on cork.

The wine started out a little linear but blossomed with air. Incisive, mineral driven with nice acidity and focus. Saline core. Developed a hint of sweetness with time. Lovely

NYE "watching the fireworks" bottle. For obvious reasons - no notes made. However, from memory, this was a very nice bottle - like a ´steely Chablis with bubbles. Clean, vibrant, dry, high acidity with lemons and minerals. An excellent bottle to end 2021 with.

Epic Napa Trip - Day 6: Tasted at VHR with Bruce - A nice enough Champagne with lots of minerality and saline...will appeal to some, but I prefer more fruit and a creamier mouthfeel. 88 for my palate, but many will think this score low.

Napa trip day 6: Drank a good-sized glass while walking through Vine Hill Ranch vineyards with Bruce Phillips. I've always found this champagne to be light at this was no exception. Typical light weight, citrus, almost no toast, lots of slate and minerals.
