Friday, May 3, 2024 - Open in the bottle for a couple of hours. With the air, the nose is rounding out with earthy notes on top of dark cherries, blackberry leaves and the smell of rocks cracking against each other (not exactly flinty but something like that). Palate is also earthy with soy sauce umami notes (in a good way) and bright crunchy cherries and cranberries. If rubies (the gemstones) had a taste I think they would taste like this. It’s a little oaky on the finish but there is really nice fruit and acid balance so I think it may just need another year or two to integrate. Awesome energy here. Much better with food (in my case a sweet potato and mushroom risotto) than without.
