Saturday, December 24, 2011 - Roasted pears, fresh white truffles, caramel, apple. Watery gold color, clear. Cloves? Baking spices? More apricot than brioche but with a nice fresh yeasty aroma. Dry. Lovely balanced acidity, long finish of vanilla and pear. Delightful. Unsure of disgorgement. Some seepage around cork but didn't seem to matter. Playful, delicate bubbles.
