Tuesday, November 5, 2013 - Completely agree with Eugene note. A well made Chablis that is now perfectly aged, taking on additional complexity of hazelnut and ever-so-slight notes of diesel in addition to warm bread, pear, yellow delicious apple, crushed seashells and flowers. Really lovely. Softened and some creaminess, but acidity still largely intact. Excellent length. Outstanding pairing with mixed platter of oysters on half shell at newly opened restaurant Fin. Sadly this was our last bottle. If I had another I'd drink in 1-2 years to see where it's at.
