Monday, April 28, 2014 - Popped and poured. Absolutely exceptional bottle of wine. The depth and complexity of the aromas was amazing. There were notes of smoked short ribs, sushi roll nori, hard raspberry candy, and soy sauce. The flavors ranged from strawberry to smarties candy, stone to foie gras and iron. The acid was still quite lively and played a nice counterpoint to the richness of the sous vide egg topping our cassoulet. The tannin structure wasn't noticeable until the finish, where it slowly built into a drying grip. Very excited I still have one more of these hidden in the cellar. Would purchase again.
