Sunday, December 18, 2016 - What a beautiful example of maturing CDP. Open for business immediately with a huge nose of black cherry, deep green rosemary and thyme, and some burnt cinnamon. The intensity continued in the mouth. Red cherry jam, wet cherry bark and smoke. Very long. Beautifully deep and layered with plenty of acid to stand-up to veal fricassee with rosemary and green olives. Superb!
