Wednesday, December 21, 2016 - Tried the Bollinger Rose NV again about 3 years after I'd originally had it and was astounded by the transformation. It's a completely different wine and all the better for it.

It's much more delicate wine than it used to be. Whereas in the past, it was a very red champagne and not dissimilar to Charles Heidsieck Rose NV, it now has an almost golden pink hue. Very different.

Maybe lacking some complexity but it's a much more balanced, pleasing champagne than it was several years ago.

There are aromas of redcurrants, cherries and wild strawberries accompanied by an almost imperceptible amount of spice.

Soft red fruit flavours are found on the palate and this is balanced by a good level of natural acidity with a long, creamy finish.

Definitely much better than before. Will be getting again!
