Sunday, January 21, 2018 - PopnPour, tasted over 2 hrs
-translucent light gold
-reticent mineral stone lemon
-med+ acidity, med- weight though bursting at the seams with sappy minerality and faint citrus cutting a laser-focused path on the long finish, needs some air and warming to near room temperature to really unfurl
-this bottle is more typical than prior ones, like so many other Dauvissat Chablis at 5-6 years of age this is all about structure and intensity after the primary fruit has started to fade, for my taste this is drinking ideally now - before the ripe apple-inspired elements of maturity start to kick in
