In perfect condition, and I know this is too often not the case. This bottle was gorgeous. Bright aromas of seashell, iodine, and green apple, very fresh and complex on the nose, and completely harmonious. Th nose alone is worth the price of admission here. Lovely too on the palate, which is quite narrow in shape and light in body, but with plenty of density, power, and length to the flavors. This is what I am hoping for when I have the chance to drink a Dauvissat Forest with some bottle age. It was ready to drink immediately upon opening, did gain in the glass for maybe and hour, by two hours open staring to fade a bit.

Pale straw color. Drank a glass plus over 2 hours. This was showing tons of oyster shell, focused lemon and lemon zest, apple blossom, dried apple, and spice. The palate is crystalline and taut, great acidity, lemon, lemon peel, oyster shell, cool limestone inerality, a touch of tarragon, with a load of dry extract and a tangerine top note as this finsihes with vigor. Loved it.

Guessed this particular bottle to be some sort of Chablis from the early 2020's!! Wow, this drinks young with lemon citrus and good dose of reduction/sulphur scents at first, giving way to more floral, tons of minerality both on the nose and palate with some leesy complexity taking form with air time and warming up in the glass. Shows real texture in th mouth and I put this at medium+ in body. No real visible new oak signature intact. Another bottle had shown more Chablis magic with better clarity and focus but maybe it's just a matter of breathing? No rush. Give this air!!

This is great right out of the blocks. Lemon, lime on the nose, developing after a while with a hint of tertiary development, but still relatively youthful. Palate is racy and long, with beautiful minerality, lemon and lime. This is great.

From a bottle with a waxed yelllow top. Pale gold, with shockingly ripe green and yellow fruit aromas. Quite sharp and mineral-driven, with tons of acid.
Expressive and lengthy, but not quite as transcendent as my lats note suggests. This had a youthful energy that makes me feel like I should sit on my remaining bottles for a few years, but given the bottle variation with the domaine... it's hard to say.

I first started drinking the Dauvissat La Forest on a regular basis back in the ‘80s, when it was a genuinely ‘under the radar’ gem. Continued buying the wine by the case or two most years and drank it with abandon, although I still have stray bottles going back to 1990 lying around in the cellar.
So now this 2012 is a pricey bottle, it seems. Is it ‘worth’ it? I can’t really say; but it’s damn good wine. Ten years after the vintage, the 2012 looks young… pale greenish straw in the glass. Just opened and poured, the nose is not very forthcoming, the palate is fresh, light, a bit of lemon, a bit of salt. After about two hours and allowed to warm up in the glass, it’s a whole other wine… the nose hints at lavender, some lime leaf, a bit of blood orange. The palate is rounder, richer, leaning a bit in the direction of dried apricot and preserved lemon. Still crisp, saline, chalky at the same time as it has taken on weight. I’d be pretty confident this will be grand 5 or 10 years from now — but it’s no slouch now. As for the ‘pre-mox’ everybody likes to talk about, not a trace here, I assure you.
I seem to recall this 2012 was about $60 on release, which was more than I was accustomed to paying for La Forest, but in retrospect that appears to have been the tail end of the ‘under the radar gem, value proposition’ era for this wine. A bit sad, really. Pretty much year in, year out it’s among the very best 1er cru bottlings from Chablis and not far off from most of the grand cru Chablis you’ll find. This bottle of 2012 certainly did not disappoint.
Incredible Chablis, certainly in the top 3 Chablis I have had the pleasure of tasting. If someone asks for a textbook Chablis wine, this would be it, to be honest this beats most Grand Cru Chablis I have tasted with most thinking oak amplifies the wine, yet sometimes overpower the wines, or others which show a little too much fat, this is just how Chablis should be and at 10 years young, I would have guessed 2017. The nose showed notes of orchard fruit, star fruit, bees wax and oyster shells. The palate was electric, powerful yet focused, with chalky acidity, wet stones, fresh herbs, quite a saline textured mid-palate with a long mouthwatering lingering finish. If I could drink only one chablis for the rest of my life it would probably be this...

You have to love the herbal complexity on this in the form of sage and honeyed green tea with a lemon/lime essences that shows a gentle leesy/yeasty softness. Tons of white floral notes mixed with soft, pliant flavors on the I palate. Gentle acidity that slips in and prevents any sense of heaviness. A terrific wine of purity and dimension! This still drinks almost too easily still and i would be ashame because it opens out like a spring flower with air time! Grand Vin, indeed.

This bottle was really rockin today! Full straw colored; nose of petrichor and crushed stone, lemon pith, stone fruit, tart green apple; contrast between fresh acidity and good extract and richness. Some spearmint peeks through and it really contrasts between complexity yet still very clean; richness vs sea air salinity. 93+

This wine offered a fascinating journey over the course of a dinner. At first showed tight and youthful, all lemony fresh, tart and tasty with good intensity and a long engaging saline finish. Two hours later it had transformed into a bigger richer wine. Nose was more lemon but also some lanolin and Chenin Blanc like notes. The palate had filled out and softened with more lemon, bigger and richer and more engaging. Perhaps a little more developed but utterly lovely. I will wait a few more years for the next bottle but I wouldn’t decant for many hours, instead it is fun to experience the wine on PnP and then again a few hours later as it transforms.

Mye mer uttrykksfull smak; stram, ren og ungdommelig med stor konsentrasjon. Strukturert, lineær og syrerik med flott sitruspreget frukt. Mineralsk med preg av sjøvann. Notes on Wines from December 2021 (Wellington, NZ): Served double blind in a pair with the 2010 by Thierry and Andrew. A more interesting nose than the 2010, citric and orchard fruit, chalky minerals but more baking spices and white florals. After a mineral, austere entry to the palate, a similar fruit profile to the 2010, just more exuberant, intense citric fruit (without straying too far into the tropical). Also, a sense of sappy, grippy, pithy 2012 phenolics. A very dry stony, saline finish. On the night, preferred over the 2010. Similarly, I thought, on its optimal plateau for at least the next five to six years. 93+.

Medium gold in color. Beautifully delineated and powerful nose. Notes of lemon, granny smith apple, honey along with oyster shells and sea breeze. It's intoxicating. Dry on the palate, medium bodied, with great concentration and depth. Rich and oily yet crisp and focused. This could easily pass for Meursault if you don't let the acidity distract you. Great length on the mineral finish to wrap this up. Beautiful bottle. #2 WOTN

Pale golden, incredible bouquet of citrus fruit and floral notes, hints of white peach, with a finish that goes on and on. A tad bit of cream on the end, all backed but a super well-integrated mineral backbone.
Give it lots of air. This was best on day 3.

Wonderful Chablis at a perfect drinking window. Only barely showing signs of darkening in color. Fresh seafoam / seawatery nose of salinity, citrus, lime, and a touch of hazelnut. Opened to console myself that daughter is leaving to return to college. Another odd showing for a '12. This begins lovely, with a touch of cream to the palate, initially, as the acidity takes a half hour to emerge. When it does, the palate is quite nice, round on the sides with a touch of butter cream, good clarity and purity, nothing off, the acidity now providing a good foundation. I thought it would be even better on the second night, but it was a bit flat.

Last bottle of this; opened it after a disappointing Le Clos in fear of premox; however this showed pure brilliance. The Dauvissat I fell in love with; the nose is beautiful and pure Chablis, lemon peel, sea breeze, crushed stone, iodine, and green apple, some floral notes with air. The nose is intense and the palate shows the same. Pure energy and freshness, but with really impressive depth and concentration. Excellent.

Youthful expressive mineral driven nose displaying lemon curd, lemon candy, granny smith, honey, rain water, spicy spices and crushed rock. Excellent concentration, nicely layered rip concentrated yellow fruit, rich and oily yet very precise and focused, bright acidity, strong limestone mineral and a long sweet yellow fruit driven finish. This has become a textbook example of Dauvissat chablis, i.e. so precise and focused.

Dauvissat's 2012 Forest is intense with a huge nose of lemon, honeyed lime blossom, and algae. Killer concentration with clear botrytis influence, rich yet not heavy with vibrant acidity and a firm mineral underpinning. Saline finish of considerable length. Very good indeed.

In a great spot right now, more focus, really high notes of citrus, sea shell, crushed stones, saline and intriguing pine tree. Discreet at opening, expend with air. The palate is classic chablis driven mineral and acid interplay with just a little more texture of honey and back end lavender honey taste. It sails on sea shore elements and bracing acidity.

What a ride! PnP. The bouquet did not take long to open right up. Brimming with apple, lemon oil, stone, and oceany minerality. The palate turns and dances through several phases all with real energy. Pear and citrus, oyster shell, petrol, earthy tones, anise, and a delicate touch of pale mint. Really gets your attention but stays on track and pleasurable.

What a big disappointment. I am not sure if the bottle was faulty in some way, as it was my first time tasting this wine, but it seemed very honeyed and one-dimensional and not all that compelling. Weird, I know, as this is an iconic wine from an iconic producer. I have a bottle of the 2017 so might open that up on the early side to compare.

Complex and attractive nose - custardy, herbal, oceanic and smoky. Bright and energetic on the palate, with lemon and apple juice, but there's a smooth creamy texture that somehow works with the sharper flavours. Remains balanced and easy to drink over a number of hours and irrespective of its serving temperature, which is to its credit.

Just another excellent bottle from Dauvissat... I keep hoping I won't like one so I can look for some cheaper alternatives, but every bottle is so good it is hard to stop looking for them. Should hold for several more years as this was still bright and fresh though it did fade a bit after 2.5 hours open.

The 2012 Dauvissat Chablis 1er Cru Les Forest surprised us the most in the white blind flight, it stood up well against Grand Cru Puligny and got my vote for white wine of the flight. Tasted blind - Slight reduction, bright orchard fruits, lychee, ripe yet sharp citrus. Full bodied with great acidity. Graceful, smart reduction and light touch of new oak. My Batard Montrachet 2014? (91-92/100)

This was one of the most intense chablis I have enjoyed. I served it to an old friend who insists that he does not like Chardonnay. He didn’t really like this so I guess he truly does not like the varietal (he did say that he was impressed with its interest and intensity- he referred to it as an almost circus freak of a wine - “the bearded woman” of summer whites). There was almost painfully intense white orchard fruit and lemon oil with some licorice. The fire doesn’t settle in the mouth. It is a sappy, concentrated wine for a cool climate Chardonnay. I am curious how it will do with more time. My favorite Dauvissat Forest to date.

This is a benchmark flavor profile for chablis. And yet, I can't help but feel it doesn't stand out. Quite dry and mineral driven, with the typical saline quality. Nothing to complain about, but not my favorite, which shouldn't be an issue given the prices today for these.

Gule epler og grønne epler, undermoden sitronskall og noe grapefrukt. Herlig nese med flott presisjon og egenart. I munn lett viskøs med en laseraktig, ren sitrusfrukt. Really showing nicely now. Lovely and enticing nose of classic chalk, iodine, and minerals. Medium, almost full, body packed with clean citron flavor. Nearly perfect balance with a fine, vibrant, long finish. La Forest is my favorite Premier Cru Chablis and this wine shows why - almost of Grand Cru quality. Should hold a couple more years, although I don't see it getting any better than it is right now.

Amazing Chablis--incredible aromatic nose of peach pit, marly chalk, very vibrant in the mouth, medium body, excellent balance, long, best Foret I've ever had. Amazing, probably WOTN, but the entire white burg flight was killer (including Raveneau Forets, Pillot Chassagne, & a Leeuwin Art Series Chard--all 2012).

WTDS in the Gardens (Tracy and Jeff's Place, Mpls): Light gold color. Drank a glass over an hour. This is so tangy and bright, effusive nose with lmon Meyer lemon, tangerine, saline, oyster shells. The palate is focused and has a grand cru weight and depth, seashore minerals, tons of glorious dry extract on a very long finish. Wow, this kills, and I'm loving how some of these 12's are drinking currently. My #2 WOTN.

Dinner at Pizzeria Bebu (Chicago, IL): Unlike the awful 2011 (which I just can't understand for the life of me), this was popped and poured, and was much more enjoyable. This is clearly a riper and thicker wine, with more heft, more ripe fruit, and more complexity. There's a nice squeeze of lemon, though the acidity isn't as sharp (it feels a little dull, honestly) to go with the minerality here. This is clearly head and shoulders better than the 2011.

At wine dinner at FransS: Closed nose. A lot of flowers, some elegance, that was it, in the beginning! And then, miraculous: in the glass it developed so quickly, it made me dizzy. Nose developed gradually, roundness came into the wine, metal-like taste came at the end. A special experience.

A tasting at home with friends (At home - Haarlem): Opened the day before (took a little sup) and in the fridge, half an hour before tasting the wine left the fridge. Flowers, violets, a whiff of fresh wood, white fruit, a bit mint and soft spices, developing all that within 20 minutes, some ripeness in the colour, very pure, persistence and a long aftertaste; next year one point plus? Quality time with this wine!

PopnPour, tasted over 2 hrs -translucent light gold -reticent mineral stone lemon -med+ acidity, med- weight though bursting at the seams with sappy minerality and faint citrus cutting a laser-focused path on the long finish, needs some air and warming to near room temperature to really unfurl -this bottle is more typical than prior ones, like so many other Dauvissat Chablis at 5-6 years of age this is all about structure and intensity after the primary fruit has started to fade, for my taste this is drinking ideally now - before the ripe apple-inspired elements of maturity start to kick in

From memory, at a restaurant... It was opened for 20 minutes but the first glass was very reductive, stinky aromas. Tasted over 3 hrs -translucent pale grey-gold -barely able to coax some stone and citrus on the reticent nose -med acidity builds through to the finish, med- weight with med depth sweet ripe stone fruit green apple and lemon finishes with citrus pith and decent length -nicely complex, softer mouthfeel and less unbridled intensity than is typically seen from this cuvée makes it more approachable at this age but not sure how that will equate to longevity though it hasn't changed that much in 3 years

Light gold color with a bright shine and no haze or particulates. I wasn't fully on board with this until the second day open, where it showed more bouquet, depth, and intensity. Then it had a wonderful nose of flint and granite, sweet butter, lemon and lime, and maybe a little pink grapefruit. Full and round mouthfeel without being heavy. Nice acidic cut and no signs of astringency. Long finish. Lesson learned: give it a good decant. Miles to go before it sleeps. 5+12+17+9= 93

Pale green gold colour. The nose is initially reticent but reveals lemon, white pear, oyster and stony characters that recall the sea. The palate remains closed yet full of structure and drive suggesting plenty of framework for future development. Classic Chablis.

Very reductive at first; Bit darker color with a rounded softer entry made me think it was a '09. Earthy tones, honey nut cheerios, slight caramel along with real earthy minerality, apple core with ripeness. But nice lift in the long finish. Good and different from the others in the line-up as Dauvissat always is. Burg group at Rosso Wine.

Reductive at opening with gunpowder/matches smell, not really appealing. With an hour of air, this great wine showed mixed citrus, licorice wood, crushed flint, seashell and a hint of honey. Laser like acid back bone, well contained with fruit on the palate. This is better then previous bottles but need a few years to come together.

PnP at Zuni Cafe. Wow! The nose, the mineral, the finish. Everything in balance for a Hot sunday afternoon lunch. This is why I love Chablis, makes a regular lunch special. The wine could age a lot more.

I find this wine extremely appealing with association of late summer. Slightly warm and fat style, but with prominent citrus notes, salty water, pear and honey, especially on the palate. Nose is more towards salty citrus and summer flowers. Great length. balance and freshness, and La Forest keeps its position as one of my favorite Chablis. Probably a perfect bottle, so lucky me.

Yellow green. Deeply pitched oyster shell aromas. Full, sappy, ripe fruit entry more pear than citrus. Great back end soil and minerality. Much bigger and very different from the 2014 before it. This has more structure than a bottle I tasted 4 months ago.

Light yellow. Some sulfur followed by more brothy elements on the nose. Relatively full bodied and glycerine. The fruit leans toward pear and yellow apple, indicative of a ripe vintage. Some vanilla bean as well. Surprisingly low acidity, but like many bottles of Dauvissat, the fat recedes to reveal more lemony fruit and structure as it sits open. Still, this is an unusually broad, open version of La Forest and not a prototypical example for that reason. Although I own it, this was the first time I have tasted it.

The nose was tight, taut and lithe at first, with seashore inflected mineral tones out front, followed by green apple and hints of lime, yet with time it began to blossom as floral tones arose, along with pear and crushed stone. On the palate, it was a bundle of energy, yet wrapped tight and angular in its youthful state, showing inner floral tones, lemon, apple and saline-minerality. The finish was fresh with vibrancy lending a last mouthwatering burst of green apple. This was a tremendous experience, having followed the 2012 for an entire day; it simply continued to steadily open more and more.

I am going to say what everyone says is not true, I compared the Camus label to Vincent label and found the wines to be different. The vincent was rich deep elegant big for chablis more like 2009 when young. The wine had depth and complexity with classic chablis undertones. The Camus able was one dimensional with not much going on. Sorry 2011 was the same way...

Senn-d off (part 2): Chablis at Nico Osteria (Chicago, IL): Extremely reduced at first, but that blew off in no time. Then, everything starts showing up, building up different layers of fruit and mnerality, all bound together by some taut acids. I really enjoyed this a lot.

Beating the heat with Whites and Bubbles (Mott St., Chicago IL): Nose: The nose is open and giving with loads of springtime florals, crushed rocks, lemon peels, white fruits, pears, citrus notes, and some saline. There is excellent depth with a lovely feminine side to it.
Taste: Medium/light bodied with high acidity. The acidity is certainly noticeable, but it isn't overbearing. The feel has more of a feminine side to it with crushed rocks, lemon peels, white fruits, floral notes, and some saline.
Overall: This was showing beautifully. There is a freshness and understatement that really drives the wine.
Lovely wine with lemon, iodine, hints of lime, peach blossom, and floral scents. The palate is crisp and tasty with a nice finish that is just rounded off enough to keep it from feeling sharp. Quite good.

Vibrant nose of lemon, slight and pleasant smoke; bread yeast, citrus/grapefruit, nice sharp cut, not shy at all, no wood, nothing in the way to thoroughly enjoy this. ( My like for this wine was influenced by enjoying it on our first trip to Paris and accompanied by a very fresh baguette.) Beautiful effort and good price point. This is how a wine can make a moment.

A bit diffuse currently, but solid raw materials. Dry extract, light wool, chalk notes, lots of energy and acidity, very zingy, almost electric in its intensity. Very bright, but shows good cut. Great now if you like brisk, tart, young Chablis, but will be excellent with a few years of sleep, as the raw materials come together. Peter B. returns to NY, L’Apicio.

Incredibly youthful, almost to the point that it feels painfully young. This is all about really primary lemon and pear fruit with a saline/stony mineral base beneath, and faint herbal accents on the nose that emerge with more air. It's not especially complex yet with the primary fruit dominating everything else, but it's remarkably light on its feet with fantastic acidity keeping it very refreshing and precise, and all too easy to drink.

Decanted and poured, this wine gave an excellent showing; however, it does begin muted and reserved. This wine improved with airing and developed aromatics of oyster shell, citrus, floral, chalk and green apple notes. The color is a youthful light yellow. The light to medium bodied palate begins reserved and somewhat one dimensional. Airings brings out more balance and depth on the palate. At this stage the wine gives a medium length finish with acidity giving the focus and precision. Based on this showing, the wine should benefit from a couple of years of additional bottle age.

In perfect condition, and I know this is too often not the case. This bottle was gorgeous. Bright aromas of seashell, iodine, and green apple, very fresh and complex on the nose, and completely harmonious. Th nose alone is worth the price of admission here. Lovely too on the palate, which is quite narrow in shape and light in body, but with plenty of density, power, and length to the flavors. This is what I am hoping for when I have the chance to drink a Dauvissat Forest with some bottle age. It was ready to drink immediately upon opening, did gain in the glass for maybe and hour, by two hours open staring to fade a bit.

Guessed this particular bottle to be some sort of Chablis from the early 2020's!! Wow, this drinks young with lemon citrus and good dose of reduction/sulphur scents at first, giving way to more floral, tons of minerality both on the nose and palate with some leesy complexity taking form with air time and warming up in the glass. Shows real texture in th mouth and I put this at medium+ in body. No real visible new oak signature intact. Another bottle had shown more Chablis magic with better clarity and focus but maybe it's just a matter of breathing? No rush. Give this air!!

This is great right out of the blocks. Lemon, lime on the nose, developing after a while with a hint of tertiary development, but still relatively youthful. Palate is racy and long, with beautiful minerality, lemon and lime. This is great.

From a bottle with a waxed yelllow top. Pale gold, with shockingly ripe green and yellow fruit aromas. Quite sharp and mineral-driven, with tons of acid.
Expressive and lengthy, but not quite as transcendent as my lats note suggests. This had a youthful energy that makes me feel like I should sit on my remaining bottles for a few years, but given the bottle variation with the domaine... it's hard to say.

I first started drinking the Dauvissat La Forest on a regular basis back in the ‘80s, when it was a genuinely ‘under the radar’ gem. Continued buying the wine by the case or two most years and drank it with abandon, although I still have stray bottles going back to 1990 lying around in the cellar.
So now this 2012 is a pricey bottle, it seems. Is it ‘worth’ it? I can’t really say; but it’s damn good wine. Ten years after the vintage, the 2012 looks young… pale greenish straw in the glass. Just opened and poured, the nose is not very forthcoming, the palate is fresh, light, a bit of lemon, a bit of salt. After about two hours and allowed to warm up in the glass, it’s a whole other wine… the nose hints at lavender, some lime leaf, a bit of blood orange. The palate is rounder, richer, leaning a bit in the direction of dried apricot and preserved lemon. Still crisp, saline, chalky at the same time as it has taken on weight. I’d be pretty confident this will be grand 5 or 10 years from now — but it’s no slouch now. As for the ‘pre-mox’ everybody likes to talk about, not a trace here, I assure you.
I seem to recall this 2012 was about $60 on release, which was more than I was accustomed to paying for La Forest, but in retrospect that appears to have been the tail end of the ‘under the radar gem, value proposition’ era for this wine. A bit sad, really. Pretty much year in, year out it’s among the very best 1er cru bottlings from Chablis and not far off from most of the grand cru Chablis you’ll find. This bottle of 2012 certainly did not disappoint.

Incredible Chablis, certainly in the top 3 Chablis I have had the pleasure of tasting. If someone asks for a textbook Chablis wine, this would be it, to be honest this beats most Grand Cru Chablis I have tasted with most thinking oak amplifies the wine, yet sometimes overpower the wines, or others which show a little too much fat, this is just how Chablis should be and at 10 years young, I would have guessed 2017. The nose showed notes of orchard fruit, star fruit, bees wax and oyster shells. The palate was electric, powerful yet focused, with chalky acidity, wet stones, fresh herbs, quite a saline textured mid-palate with a long mouthwatering lingering finish. If I could drink only one chablis for the rest of my life it would probably be this...

You have to love the herbal complexity on this in the form of sage and honeyed green tea with a lemon/lime essences that shows a gentle leesy/yeasty softness. Tons of white floral notes mixed with soft, pliant flavors on the I palate. Gentle acidity that slips in and prevents any sense of heaviness. A terrific wine of purity and dimension! This still drinks almost too easily still and i would be ashame because it opens out like a spring flower with air time! Grand Vin, indeed.

This wine offered a fascinating journey over the course of a dinner. At first showed tight and youthful, all lemony fresh, tart and tasty with good intensity and a long engaging saline finish. Two hours later it had transformed into a bigger richer wine. Nose was more lemon but also some lanolin and Chenin Blanc like notes. The palate had filled out and softened with more lemon, bigger and richer and more engaging. Perhaps a little more developed but utterly lovely. I will wait a few more years for the next bottle but I wouldn’t decant for many hours, instead it is fun to experience the wine on PnP and then again a few hours later as it transforms.

Notes on Wines from December 2021 (Wellington, NZ): Served double blind in a pair with the 2010 by Thierry and Andrew. A more interesting nose than the 2010, citric and orchard fruit, chalky minerals but more baking spices and white florals. After a mineral, austere entry to the palate, a similar fruit profile to the 2010, just more exuberant, intense citric fruit (without straying too far into the tropical). Also, a sense of sappy, grippy, pithy 2012 phenolics. A very dry stony, saline finish. On the night, preferred over the 2010. Similarly, I thought, on its optimal plateau for at least the next five to six years. 93+.

Medium gold in color. Beautifully delineated and powerful nose. Notes of lemon, granny smith apple, honey along with oyster shells and sea breeze. It's intoxicating. Dry on the palate, medium bodied, with great concentration and depth. Rich and oily yet crisp and focused. This could easily pass for Meursault if you don't let the acidity distract you. Great length on the mineral finish to wrap this up. Beautiful bottle. #2 WOTN

Absolutely fantastic. Agree wholeheartedly with Danstrings note.
Pale golden, incredible bouquet of citrus fruit and floral notes, hints of white peach, with a finish that goes on and on. A tad bit of cream on the end, all backed but a super well-integrated mineral backbone.
Give it lots of air. This was best on day 3.

Wonderful Chablis at a perfect drinking window. Only barely showing signs of darkening in color. Fresh seafoam / seawatery nose of salinity, citrus, lime, and a touch of hazelnut. Last bottle of this; opened it after a disappointing Le Clos in fear of premox; however this showed pure brilliance. In a great spot right now, more focus, really high notes of citrus, sea shell, crushed stones, saline and intriguing pine tree. Discreet at opening, expend with air. The palate is classic chablis driven mineral and acid interplay with just a little more texture of honey and back end lavender honey taste. It sails on sea shore elements and bracing acidity.

The palate turns and dances through several phases all with real energy. Pear and citrus, oyster shell, petrol, earthy tones, anise, and a delicate touch of pale mint. Really gets your attention but stays on track and pleasurable.

Not expecting much. This is a textbook mineral driven Chablis. So much wet stone. The fruit remains white and citrusy, also reasonable acidity. Really enjoyable, classic Dauvissat and atypical of the vintage. Being lucky with the last few bottles of Dauvissat.

Complex and attractive nose - custardy, herbal, oceanic and smoky. Bright and energetic on the palate, with lemon and apple juice, but there's a smooth creamy texture that somehow works with the sharper flavours. Remains balanced and easy to drink over a number of hours and irrespective of its serving temperature, which is to its credit.

J'ai eu la chance de goûter à 2 bouteilles la même semaine! Les amis sont très généreux. Vraiment exceptionnel, en particulier pour un 1er cru. Me semble à point, avec encore une longue vie devant lui, mais tellement d'équilibre, des arômes envoûtants de fruits du verger, et une finale saline à souhait. J'adore le Forest du domaine!

Just another excellent bottle from Dauvissat... I keep hoping I won't like one so I can look for some cheaper alternatives, but every bottle is so good it is hard to stop looking for them. Should hold for several more years as this was still bright and fresh though it did fade a bit after 2.5 hours open.

Quick decant as is my preference with this wine. There is no rush to drink these. It shows typically (both stony and sappy) - thought perhaps a bit firmer at 7yrs than was the 2010 at same stage. This is a superb forest. Corkage at Racines

This was one of the most intense chablis I have enjoyed. I served it to an old friend who insists that he does not like Chardonnay. He didn’t really like this so I guess he truly does not like the varietal (he did say that he was impressed with its interest and intensity- he referred to it as an almost circus freak of a wine - “the bearded woman” of summer whites). There was almost painfully intense white orchard fruit and lemon oil with some licorice. The fire doesn’t settle in the mouth. It is a sappy, concentrated wine for a cool climate Chardonnay. I am curious how it will do with more time. My favorite Dauvissat Forest to date.

Really showing nicely now. Lovely and enticing nose of classic chalk, iodine, and minerals. Medium, almost full, body packed with clean citron flavor. Nearly perfect balance with a fine, vibrant, long finish. La Forest is my favorite Premier Cru Chablis and this wine shows why - almost of Grand Cru quality. Should hold a couple more years, although I don't see it getting any better than it is right now.

Dinner at Pizzeria Bebu (Chicago, IL): Unlike the awful 2011 (which I just can't understand for the life of me), this was popped and poured, and was much more enjoyable. This is clearly a riper and thicker wine, with more heft, more ripe fruit, and more complexity. There's a nice squeeze of lemon, though the acidity isn't as sharp (it feels a little dull, honestly) to go with the minerality here. This is clearly head and shoulders better than the 2011.

Flowers, violets, a whiff of fresh wood, white fruit, a bit mint and soft spices, developing all that within 20 minutes, some ripeness in the colour, very pure, persistence and a long aftertaste; next year one point plus? -this bottle is more typical than prior ones, like so many other Dauvissat Chablis at 5-6 years of age this is all about structure and intensity after the primary fruit has started to fade, for my taste this is drinking ideally now - before the ripe apple-inspired elements of maturity start to kick in

From memory, at a restaurant... It was opened for 20 minutes but the first glass was very reductive, stinky aromas. Decanted the other half of the bottle and with air and some time it opened and showed the classic profile of wet stones & citrus/lemon on nose and sea shell & some lemon oily texture on palate, which was a bit too fat for me but enjoyable nonetheless. It needs time.

Light gold color with a bright shine and no haze or particulates. I wasn't fully on board with this until the second day open, where it showed more bouquet, depth, and intensity. Then it had a wonderful nose of flint and granite, sweet butter, lemon and lime, and maybe a little pink grapefruit. Full and round mouthfeel without being heavy. Nice acidic cut and no signs of astringency. Long finish. Lesson learned: give it a good decant. Miles to go before it sleeps. 5+12+17+9= 93

Pale green gold colour. The nose is initially reticent but reveals lemon, white pear, oyster and stony characters that recall the sea. The palate remains closed yet full of structure and drive suggesting plenty of framework for future development. Classic Chablis.

Reductive at opening with gunpowder/matches smell, not really appealing. With an hour of air, this great wine showed mixed citrus, licorice wood, crushed flint, seashell and a hint of honey. Laser like acid back bone, well contained with fruit on the palate. This is better then previous bottles but need a few years to come together.

I find this wine extremely appealing with association of late summer. Slightly warm and fat style, but with prominent citrus notes, salty water, pear and honey, especially on the palate. Nose is more towards salty citrus and summer flowers. Great length. balance and freshness, and La Forest keeps its position as one of my favorite Chablis.
Probably a perfect bottle, so lucky me.

The nose was tight, taut and lithe at first, with seashore inflected mineral tones out front, followed by green apple and hints of lime, yet with time it began to blossom as floral tones arose, along with pear and crushed stone. On the palate, it was a bundle of energy, yet wrapped tight and angular in its youthful state, showing inner floral tones, lemon, apple and saline-minerality. The finish was fresh with vibrancy lending a last mouthwatering burst of green apple. This was a tremendous experience, having followed the 2012 for an entire day; it simply continued to steadily open more and more.

I am going to say what everyone says is not true, I compared the Camus label to Vincent label and found the wines to be different. The vincent was rich deep elegant big for chablis more like 2009 when young. The wine had depth and complexity with classic chablis undertones. The Camus able was one dimensional with not much going on. Sorry 2011 was the same way...

Overall: This is just beautiful. Medium body, high acidity, medium tannin, vibrant fruit, with poise and structure that shows a wine that can be enjoyed now and with some time in the cellar. Outstanding!!

Beating the heat with Whites and Bubbles (Mott St., Chicago IL): Nose: The nose is open and giving with loads of springtime florals, crushed rocks, lemon peels, white fruits, pears, citrus notes, and some saline. There is excellent depth with a lovely feminine side to it.
Taste: Medium/light bodied with high acidity. The acidity is certainly noticeable, but it isn't overbearing. The feel has more of a feminine side to it with crushed rocks, lemon peels, white fruits, floral notes, and some saline.
Overall: This was showing beautifully. There is a freshness and understatement that really drives the wine.

Lovely wine with lemon, iodine, hints of lime, peach blossom, and floral scents. The palate is crisp and tasty with a nice finish that is just rounded off enough to keep it from feeling sharp. Quite good.

Still a young pup, but delicious lemon, oyster shells, lovely tartness. Full in the mouth. Can't wait to see how it develops.

Vibrant nose of lemon, slight and pleasant smoke; bread yeast, citrus/grapefruit, nice sharp cut, not shy at all, no wood, nothing in the way to thoroughly enjoy this. ( My like for this wine was influenced by enjoying it on our first trip to Paris and accompanied by a very fresh baguette.) Beautiful effort and good price point. This is how a wine can make a moment.

Incredibly youthful, almost to the point that it feels painfully young. This is all about really primary lemon and pear fruit with a saline/stony mineral base beneath, and faint herbal accents on the nose that emerge with more air. It's not especially complex yet with the primary fruit dominating everything else, but it's remarkably light on its feet with fantastic acidity keeping it very refreshing and precise, and all too easy to drink.

Decanted and poured, this wine gave an excellent showing; however, it does begin muted and reserved. This wine improved with airing and developed aromatics of oyster shell, citrus, floral, chalk and green apple notes. The color is a youthful light yellow. The light to medium bodied palate begins reserved and somewhat one dimensional. Airings brings out more balance and depth on the palate. At this stage the wine gives a medium length finish with acidity giving the focus and precision. Based on this showing, the wine should benefit from a couple of years of additional bottle age.
