Sunday, November 24, 2019 - Piedmont II - better and learnings; 11/23/2019-11/29/2019 (Barolo, Alba, others): Champagne for the red wine drinkers palate. Originally served in a champagne bucket and in an effort to speed the evolution we kept it out and I tried to leave my glass alone as much as is possible when there is selosse in there so it could get some evolution. For as much as I did it, I was rewarded. The last sip I had of this wine was by far the best. It just adds some extra layers of complexity. It's a special wine and yet it's super young (Jan 2019 disgorgement) and so I don't think as special as it could have been. Added some weight and good acid and then just maybe a touch of the fancy french brioche.
