Saturday, January 11, 2020 - 42% Pinot Noir, and it really shines through here. Several things stand out. The red fruit dominance on the nose and palate - loads of raspberry and cranberry, with structure. Then the length - super long length. Then the 9 years on lees - so subtle, so smooth, so rounded.

This really is a beautiful champagne that will stand up to Salmon and whatever else you throw at it. Definitely lay it down for further ageing if you would like as it has the acid, the structure and the fruit to go on for a lot longer.
