Monday, May 4, 2020 - Drank over several days. Day 1 somewhat muted notes of green apple, bit of light citrus/lime, bit of yellow stone fruit, mineral. Acid and mineral on palate, with subtle edge (wonder if this echoes the pepper and spice ERIC GUIDO notes?) Developed more depth and richness of fruit days 2 and 3, acid edge softened. While enjoyable I end up with BEERZERBUB on this and suggest inscrutable trending to austere early on and becoming more enjoyable over time. Not sure bottle time will alter it's character.
