Saturday, October 10, 2020 - Our penultimate bottle, popped and poured. Notes of black tea leaf, bouillon and forest floor. There's a hint of red fruit, but it's subtle. Has a bit more weight on the palate than I was expecting. Black cherry, tea leaf and Asian spice on the palate. Medium finish. Let's see if the bouquet improves as this breathes. Doesn't change much over a couple of hours and the bouillon note gets a bit stronger. Still has nice fruit on the palate though and worked well enough with a selection of cheeses.
