Now under DIAM, there's less risk of the dreaded premox, which is nice, since this is fabulous. The nose is very Chablis - lemon, oyster shell, a bit of herbaciousness. But the palate is huge, and on day one wasn't especially giving. On day two this had more development, with more white fruit coming through, and some of the richness one would expect from grand cru Chablis. However, it's still a very dense wine right now; I would hold this for many years to come. I think Fevre nailed their 14s, and I look forward to drinking more of these.
