Thursday, December 24, 2020 - Adding a point from the last time drinking this in Feb 2019. I still decanted this for about 2.5 hours before drinking and had with Christmas Eve ham over about another 2 hours.
From all the previous aromas/flavor profiles you can see where in 2 years they’ve already started to develop, deepen and expand. While there is still red cherry and pomegranate there’s a bit more tea as well as moving from what I may have called “earthy” or soil before to a bit more minerality and rocks. I get a little less of the wood and a richer concentration of the (still subtle) purple flowers. Initially medium acid followed by a second or two delay to a tart middle of the tongue pucker that moves out in a triangle leaving the tannins on the back cheeks and tip of the tongue.
