Park90 bar in Singapore, impromptu Burgundy tasting with friends. Last bottle of the flight, with a short decant. The initial nose is an absolute red cherry fruit bomb, we thought we were in Rhône Syrah territory. After 5 min in the glass the complex nose is showing a lot more - cassis, black cherries, cloves, mushroom, wet forest floor, a bit of smokiness. Loving it. Med acidity, full body, Med alcohol, Med+ flavor intensity, Med tannins, Long finish. Excellent structure and balance, everything is well integrated. We can only imagine how beautiful this wine will taste in 10-15 years, but this showing predicts a very bright future indeed. Stock it up and watch out for this producer.

Adding a point from the last time drinking this in Feb 2019. I still decanted this for about 2.5 hours before drinking and had with Christmas Eve ham over about another 2 hours. From all the previous aromas/flavor profiles you can see where in 2 years they’ve already started to develop, deepen and expand. While there is still red cherry and pomegranate there’s a bit more tea as well as moving from what I may have called “earthy” or soil before to a bit more minerality and rocks. I get a little less of the wood and a richer concentration of the (still subtle) purple flowers. Initially medium acid followed by a second or two delay to a tart middle of the tongue pucker that moves out in a triangle leaving the tannins on the back cheeks and tip of the tongue.

Day 1: A bit reticent on the nose, and A bit reserved on the palate at first. True to the vintage, it shows a sense of power and ripe red cherry fruit, but welded to a tightly coiled frame of acid and minerals, and showing some lovely floral perfume and 5-spice in the inner mouth. Strong tea-like tannins, a kiss of oak, and a lengthy finish. Unfurls over the course of 3 hours. 91+
Day 2: after vacuvin and fridge... a bit simpler and less elegant, with more fruit up front, a bit of alcohol poking out, and tannins softer but not resolved. 88

Ruby. Light lilac/floral perfume with strawberry, vanilla bean, raspberry, wood chest. Tart red cherry, raspberry, pomegranate and a little bit of earth. Good acidity, gentle tannins let decant through the meal at Ma Cuisine in Beaune. Could spend more time in the cellar vs the decant. Great debut wine from Thibaud.

Clear, pale/medium ruby. Ripe strawberry, red and dark cherry, sous bois, earth, oak, hint of green stems and violets. Developing. High acidity, medium+ body, medium+ intensity of strawberry, red cherry (with a little dark thrown in), oak, earth, sweet spice. Medium+ pretty firm tannins, medium+ finish. A pretty nose with good concentration. A youthful palate with smooth red fruit and spice to support. Oak is not overpowering but does need a few more years to better integrate. A nice bottle very much on the way up. 91-92 pts.

It was the youngest wine of the night but yet offered the biggest surprised. Might not be able to call it a Volnay given the floral and elegant character. The wine is still young and might not be able to drink for sometime. Given time there will be more density developed from its sharp acidity. A wine to look out for.

La Paulée de San Francisco - Grand Tasting (The Fairmont - San Francisco CA): Tasting, brief note. All red fruit with lots of density, spice hints and an expanding finish. Very good now, but I think this will really put on weight with time in the cellar. 91-93 point potential.
