Saturday, January 16, 2021 - Not much to add to others' notes; this is an exemplary entry level Trocken. It gained a bit of weight and complexity on Day 2 so no hurry and it will be interesting to revisit in a couple of years. There is a slight hollowness in the middle and it is distinctly acidic, but it works very well with food.
