Monday, January 18, 2021 - Deep yellow color. A nose of honeyed, graham cracker, ginger cake tones with sea salt, candle wax, over lemon and papaya. Rich texture, with generous yellow apple and plum fruit, topped in honey, graham cracker and nougat. I would like a bit more acidity, but it still shows clean, mineral, mountain stream and floral tones. The texture and fruit are delightful, a bit more acidity and I think this could age further, but I'm glad I drank it when I did.
